We developed these home-style Indian recipes by watching and observing my friend cook his mother's Kolkata (Calcutta) recipes. He cooked, and we measured. And, of course, we then enjoyed delicious complexly-flavored meals. Home-style, these recipes include whole-spices to infuse the flavors.
This typical Indian Dahl Soup starts with pulverizing the lentils to form a creamy soup base, and ends with adding an Indian Tarka (garlic fried oil) to infuse and seal a garlic layer to the soup. Taste the soup before and after the addition of the Tarka, and experience the depth added through this last step. Simply add your pantry ingredients such as Stock, Onions, Garlic and Carrots. Enjoy! |
